It is so sharp---it's no trouble to slice out the membrane on peppers or chop carrots as fine as you want. I had no trouble slicing matchstick carrots for a party dip that my guests commented on the wonderful size (easy to consume without chomping noise).

Light weight!
I love everything about the French chef knife but the best part is that it is light weight. I have some arthritis in my hands and that makes chopping veggies and things up for meals very difficult especially with a heavy knife. The French Chef is the perfect weight for me.
