Would RecommendLove the new knife, had some Rockfish to do and the local fish guy cries like a baby if you ask him to remove the skin. Watched Jacques do a Flounder / Sole on video and went for it. The knife has just the right flex for me and was plenty sharp from the factory. The handle and weight works in my hand perfectly as well. Jacques would be proud, great knife so far.

Very Flexible
Would RecommendMy husband is an avid fisherman, and we have been through our share of fillet knives. The Pro 7 inch Fillet knife is in a class of its own. The special formula steel is so durable that it can withstand the flexibility needed to skin trout, blue fish and get through and around all the soft bones. Really like the one piece construction and the full tang which makes it so durable. Looking forward to many years of use.

perfect fillets
Would RecommendIts hard to find a high end fillet knife these days. This one is great. The blade is so thing and flexible. I can get right close to the skin to remove it in one fluid motion with no waste. The quality Zwilling German steel gives me comfort and confidence in the blade no matter how much i flex it. It is very easy to sharp and gives great fillets every time.

Would RecommendLong enough length to handle pretty good-sized fish skinning. Stain-proof steel nice for job it's made for. Extended flange helps get through cut easier.

Wonderful knife
Would RecommendI don't like to have skin on my fish, so I am so happy I purchased this knife. Before I had this, I just tried using a paring knife and I would cut off so much flesh that I would make sure to buy extra, but now I have no more waste!
