Would RecommendThe size of this knife is perfect for my small hands. I find the large chef's knives a bit intimidating. Purchased this knife instead and have no regrets. Nice and sharp made with FC61 steel and 48 beautiful layers which is durable and holds an edge. Great design and performs beautifully.

Great prep knife!

Super sharp. Couldn’t ask for a better prep knife. Only con was the lightness of the knife overall. I guess I’m just used to German steel being heavier

great prep knife
Would RecommendI love this knife. The blade is made from a high carbon steel that stays sharp for a very long time. The Damascus patterning is a real work of art. The handle is just a little bit thicker than the average D shaped Japanese style handle which feels real good in my hand. The knives are made in Seki, Japan the center for Japanese cutlery and the artistry really shines through.

I have used this knife for a few years now and have come to rely heavily on the prep knife. It is a good inbetween knife for the chef and the santoku, as it is a little smaller so can handle all your smaller meats, poultry and vegetables. The traditional D-shape handle fits snuggly and comfortably in the hand so you have good control and comfort.

I love using Miyabi knives in my kitchen and this one of my favorites. I use this for smaller cuts of meats, fruits, and veggies. The FC61 core makes it so the knife is durable, yet razor sharp. The sharpness is very evident when cutting and the Damascus pattern on the blade is true to the beauty of Japanese cutlery.

Authentic Japanese Knife
Would RecommendThe prep knife is perfect for smaller cutting but is a go-to knife for a lot of people because of the shorter, curved blade. It also has that true Asian edge making it razor sharp. Kaizen II is an authentic Japanese knife; much of the process is by hand. It is made from FC61 steel which is very hard (think great edge retention) but also extremely durable (very chip resistant). This Miyabi Kaizen II is a dream to use - especially for those smaller tasks. I use this mostly for fruits and veggies, but can also use for smaller meats.
