Would RecommendI am a sushi chef for more than 10 years, spent a lot of money to looking for a good and dependable knife. This it is. After sharpening the knife , it can last for 2-3 weeks for every day using. The weight of the knife is not too light and not too heavy. The wood-handle is beautiful. That made me decide to buy the same series of 9” slicing knife and the Kiritsuke. I hope they will have the 11” or 12” slicing knife.

Spectacular.
This is an absolute beautiful knife.. easily the sharpest factory edge I've experienced. This will be primarily for vegetables and I have other Henkels that are less delicate and fancy. This company has never ceased to amaze me from the professionalism all the way down to their warranty. This knife was sent to me replacing one that was damaged about 10yrs ago.
