Would RecommendI love everything about this knife. The wooden handle is very distinct with the gold and red accents. It is also very comfortable to hold. The blade design is cool with part of it hammered and the lower portion sand blasted. The super hard high carbon steel stays sharp for a very long time and is easy to maintain. The blade shape is great for prep. It gives me a smaller knife for quick small prep but with an offset handle for use on a cutting board you dont get with a pairing knife.

The Miyabi Artisan line is one of my favorite and the prep knife is one of my most used knives in the kitchen. It is super sharp so can slice, dice, and chop with percision and it feels comfortable in my hand while using, which is very important.

Fabulous for fine work and cutting
Would RecommendI love these prep knives for the smaller, finer tasks, like deveining shrimp as I did the other night. The super sharp edge cut through channel and, in the Artisan's case, the hammered tsuchime blade didn't drag the meat, it just glided right through. This is an excellent prep knife, great for slicing super thinly. I also like it to clean up meats and poultry -getting rid of the silver skin, the bits of fat. A great prep knife is worth it's weight in gold - no, worth twice it's weight.

Would RecommendPerfect-sized SG2 micro-carbide Japanese steel. Mid-size pakkawood handle makes it the most controllable. Big knuckle clearance and hammered to prevent food-sticking.

Would RecommendArtisan is a thing of beauty! The first attraction for me is the "hammered" blade; it's such a unque finish but it's also going to help keep food from sticking to the blade. The SG2 steel is very hard which guarantees it will have amazing edge retention. It also boasts that crazy sharp Asian edge angle. I love a prep knife for all they do without having to use a big or long knife! This is a beautiful SG2 knife. The hand hammering on the blade is really stunning and makes food fall off the blade easily. D shaped handle feels smooth and secure and balanced in either the left or the right hand. Keeps its sharp edge for many uses with proper handling and occasional sharpening. Prep knife can be used for all of those small jobs such as shallots, garlic, citrus and mincing herbs.

Would RecommendThe size and shape of this blade make it a great addition to your collection. Wider blade and handle gives you plenty of room to work on your cutting board. I like to use this knife for longer vegetable such as eggplant, zucchini and cucumbers. Would RecommendI noticed Miyabi started to offer prep knives in most of their lines. It has become my new favorite. It's larger than a paring but smaller than a chef. The blade is a little wider so you can use it on a cutting board and your knuckles do not hit the board. This Artisan is awesome. So sharp and comfortable.
