If your sinking a 4x4x8 fence post, I personally would dig the hole 2' deep and just the circumferance of the post hole digger. Regarding the concrete, you'll probably need atleast 2 1/2 bags per post, use regular good old quikcrete pour it dry into the hole and fill with water, mix with a piece of rebar, pipe, etc., while moving the post around in the hole. Don't get the concrete too wet, just the consistancy of syrup, add water as needed. Once you get the hole about 1/2 to 2/3 full of concrete STOP moving the post around or it will set crooked.
