Perfect Fit

Would RecommendThis is a great pairing knife. The blade is super sharp. The FC61 steel can be very thin but more chip resistant than most Japanese blades. It stays very sharp for a long time and is easy to maintain. The Damascus style patterning shows the craftsmanship that goes into Miyabi knives. I like this new updated handle over the original Kaizen line. The extra bulk in the handle makes it very comfortable to hold while working with small in hand tasks like peeling.

One of my most used knives in the kitchen! I always have this knife close at hand when I am working in the kitchen. I bake so I am constantly peeling fruits largely, but some vegetables as well. It is perfect for peeling the fruits and it is super sharp so often I can get that peel off in one long piece! The traditional D-shape handle is very comfortable in my hand and make the small work easy!
