Surprising little prep knife

This knife is unsurprisingly exceptionally sharp as you would expect. The slightly hammered knife finish helps with food release which makes prep work much faster since there is almost no adhesion. The handle is beautifully crafted but also the best of the prep knives I tested in store for my hands. I have slightly larger hands, rather shorter and wide than long and slender (an XL in most gloves). Great knife. The Miyabi Artisan 5” Prep Knife feels extremely well-balanced and comfortable in hand. These are the greatest knives I have ever owned period. We received one like 10 years ago from some close friends as a gift and it is still our most favorite knife. So we just purchased our 2nd one, the 5-inch prep knife. Today we literally took every single other knife out of our drawer and gave them to one of our boys. We are adding a few more of these to our collection and will only use these going forward.

Rounding out my Miyabi knife set

I augmented my 7 knife Miyabi Artisan set with this 5.25” prep knife. I find myself reaching for this knife more and more often when, historically, I’d only grab my chef’s knife. I love these knives and glad I got this one to round out my set.

Weight of the handle is superb. It’s what sold me on getting it. Stunning.

Glides through anything

This knife is a game changer! It works for everything from chopping herbs to vegetables to meat and fish. Shopping squash used to always be so scary to me as I was always worried about slipping, but because this knife is so easy to handle and so sharp, it makes cutting squash and pumpkins like nothing! I plan to keep buying the rest of the set as I love these so much! Would definitely recommend!

Beautiful new knife

I love that it’s lightweight so all my cooking and chopping doesn’t strain my wrist/hand.
