Directions say to apply the sealant tape in a clockwise direction, but it doesn't say which way you are holding/looking at it to determine direction

Hello, The shower arm only threads on to the shower head at one point, the end that goes furthest from the stub out in the wall. You should apply the tape in a clockwise direction, with the shower head attachment end at the bottom.
