Can this be used on ceiling lathe? How thick can a layer be?


No, this product is not recommended for lath. For metal lath we recommend Two-Way Hardwall or Gypsolite plaster. Wood lath is not an acceptable substrate, simply screw metal lath to the wood for plaster application.
