The Henckel's 8-inch Chef's Knife
So far so good. Currently it is sharp and has worked well. My concern is that the blade is very thin, and may disfigure. I also don't know how long the knife will stay sharp and whether because the bad is so thin, whether sharpening it will cause a problem.

It easily rocks over vegetables for dicing, mincing and general large cuts. Also great for most carving. I cannot rate this knife highly enough.
