Would RecommendI was trying to replace my Henckels 4” PROFESSIONAL “S”, FRUOIDUR ice hardened, 31020-100 (4”) NO STAIN, FROM SOLINGEN GERMANY. I was surprised when the knife I ordered is a HENKELS, classic, 31160-100 4” GERMAN STEEL, MADE IN SPAIN 42ZS62. The weight and hand feel of the two knives is very different (Professional - .069kg, Classic – 059kg). I was unable to locate a similar knife to the PROFESSIONAL via the US accessible Henkle website. I own a whole set of Zwilling. When the handle on the first pairing knife was damaged (handle melted when hubs set it on a hot burner), he immediately said, get another one! I love how it feels in my small hand and is easily sharpened.

Good, but not made to last
Would Not RecommendGood knife, but doesn't hold up over time. After 10 years of light use in my home kitchen, the handle has cracked and come apart, one of the rivets has fallen out. I've only hand washed. The build quality is less than what I'd expected.

Perfect knife for daily use
