Yes, you can cut off the backsplash. It isn't hard, you can do it with a tablesaw. I did the same thing. My carbide tip blade made a smooth cut and did not chip out. you will need to put a scrap the thickness of the rounded front under the countertop near the backsplash in order to get a square cut. Just set your rip fence to the desired depth you want on the counter and go slow. You might need someone else to hold the other side of the counter as it comes out of the saw.
