So this will work on a galvenized steel potable water pipe correct? What about the rubber inserts that normally go into a compression coupling?


No, this fitting is not for use with potable water pipe. This compression coupling (Item #141847 Model #49060) is specifically designed for electrical applications and joins two lengths of threadless Rigid conduit or IMC.
