Does this product need to be aired out once a week so the documents inside do not get moldy? Or can I just leave it locked until I need something?

If you choose to store delicate items such as jewelry with working parts, watches, stamps or photos, we recommend putting them in an airtight container, prior to placing them in the product for storage. Opening the safe periodically will also help, but is not necessary to do each week.
