how would you know if the fireplace doors reach the 200 degree mark?

I would attach my meat thermometer to the door. Better yet is to shoot it with a laser thermometer if available. You should check out the paint made for high temp use.

We recommend testing the temperature of the surface around a fireplace before applying a product. If surface temperatures reach higher than 200°F and Rust-Oleum Universal Spray Paint is applied, it can result in discoloration and peeling over time.

We used this paint on light fixtures and a ceiling fan. It worked well.

First, I doubt that the fireplace surround would get that hot. The doors will depend on how much air regulation you are allowing ( the more air, the hotter the fire ) I would suggest that you purchase or borrow a infrared thermometer to test the actual temperature. Lowes item # 73790 for $19.95. It would be good to have to track the stove temp. during the heating season. I hope this answers your inquiry.
