Do I have to install the deck plate or does it look good without it? (I have a single hole)

This faucet was designed for installation through 1 or 3 holes, 1-1/2” minimum diameter. The Moen 87028SRS Edwyn Spot Resist Stainless Single Handle Pull-down Kitchen Faucet with Deck Plate and Soap Dispenser Included comes with a 3-hole escutcheon/deck plate. The faucet can be installed with the 3-hole escutcheon/deck plate, or it can be installed through a single-hole, without using the escutcheon/deck plate.
