When applied over oil based stain, does it turn yellowish? Also what is the sheen like?

The color of the wood will determine the color. It depends on how dry the wood is and how many coats are applied. Each coat should be completely dry before adding another coat which may take a few days in between coats. Finishing with polyurethane can be done for a shiny coat.
