I am using 6 or more bags. Would I dump them in all at once an then add the water OR do a couple of bags at a time adding water as you go along?

Man, I've been building decks for 10 years and have never had a problem with putting a 60lb bag per pole in the hole and splashing about a 1/4 of a 5gal bucket full in right after. I dump in the concrete, pack it with a pack stick (old broken off splitting maul handle), add water, then pack a bit more. Never had a deck post sag. Make sure you are digging a 2ft hole and putting at least 60lbs per hole. These little 50's are a waste. I use 60's or 80's, depending on what is available and the price at the time.

I recommend to mix one bag adding water as you go along for better mixture and consistence.

All at once

Dump them all and add water. Use a stick or rod to poke holes here and there and allow water to seep in. That's it...

In cold weather, which, for the purposes of concreting, may be considered to be weather that is below 50 dF, or near freezing 32 dF at night, it is important to take certain precautions: 1) Mix the concrete with water before placing the material in the hole, 2) store the bagged concrete in a warm temperature before use, and use warm water to mix, 3) protect the concrete from freezing for at least 48 hours for QUIKRETE Fast Setting Concrete Mix using plastic sheeting, insulated blankets, or other means. If these preventive measures cannot be taken, it would be best to wait for warmer weather. In weather above 50 dF, if pouring the QUIKRETE Fast Setting Concrete Mix into the hole dry, place the material in lifts of 2' 6” or less, adding the appropriate amount of water for each lift, to allow water to soak all the way through. Using a shovel to “chop” the material in the hole will help distribute the water.

You definitely can use it all at once, but if it's a single hole, just go half at a time to make sure you don't have to do any mixing. You don't have to wait in between either.

I believe that would depend on your project. If you have a few small areas where the cement will be placed, then do a bag or two at a time. If you have one large area where all six bags will be used, then do them all at once. It would be rather difficult for you to finish an area that is setting up while mixing another batch to be placed next to it without an expansion strip or some other divider such as a form 2x4.
