You can install a gate valve, or sluice valve, to fully stop the flow of water in a pipe. This plumbing valve functions by physically placing a barrier in the way of the fluid flow inside your piping. Turning the knob lifts the physical barrier. When it's full open, it presents basically no obstruction to the flow of the water path. The sluice valve is often found most useful in pipes with larger diameters, as they function efficiently and are easier to install than other valve types. Gate valves are generally preferable when the goal is fully stopping the water flow, rather than regulating it.
