Benefits of Induction

The biggest advantage of induction stovetops is their ability to heat quickly. When boiling a pot of water, induction stovetops can do the task in less time — two to four minutes less than gas or electric ranges. Another great benefit is that its heating occurs through conduction, transferring heat from a cooking pot to the glass surface of the stovetop. That means as soon as a pot or pan is removed, heating subsides. The glass surface of an induction stovetop will never get as hot as a traditional electric range. Plus, if you turn on an induction burner accidentally, it won’t heat unless a pot makes contact with it.


The Right Cookware

If you have a traditional gas or electric stovetop, you’ll need to replace your cookware with pots and pans that are induction compatible. Induction stovetop cookware has a magnetic bottom.


How to Clean Induction Stovetops

Induction stovetops are probably the easiest to clean of all stove types. Because they have a flat surface, food won’t get stuck in the heating elements. To clean then, simply use a damp sponge to clean off food stains. For more stuck-on food, gently use a single-edge razor at a 45-degree angle to scrape it off. You can also use cooktop cleaners compatible with induction for an extra-clean finish.

If you’re interested in features like convection, cooktops don’t offer that — it’s an oven feature and you’ll need a range with convection cooking.
