Hardy enough to withstand early frosts, these vegetables are good bets for the fall garden.

Kale Lettuce Frost

Spinach
Start in late summer; harvest in 40 to 60 days. Sow in waves for longer harvest.

Carrots
Sow seeds in place; fall crop can be started 50 to 90 days before harvest, depending on variety.

Kale
Plant or sow. Matures 50 to 60 days after transplanting. Flavor improves after a light frost.

Beets
Sow in place in 2-week intervals for continual harvest. Matures in 50 to 60 days.

Lettuce
Can be planted or sown in place. Matures in 45 to 80 days, depending on variety.

Radish
About the easiest (and quickest) vegetable to start and grow. Harvest in as little as 20 to 30 days.
