Cupcake Frosting

Crown cupcakes -- or any cake -- by spreading on homemade frosting with an added dash of flavor. A sturdy stand mixer helps you finish the job in no time.

A KitchenAid (#184335) stand mixer makes short work of whipping up homemade frosting. Try either a raspberry or mochaccino flavoring for a gourmet touch.

Ingredients:

  • 3/4-cup butter, softened
  • 2 pounds powdered sugar (about 8 cups)
  • 1/3 cup milk
  • 2 teaspoons vanilla
  • 1/3-cup milk
  • Food coloring (optional)

To make the frosting, add butter to a large bowl and beat with an electric mixer on medium speed until smooth. Gradually add 2 cups of powdered sugar, beating well. Slowly beat in 1/3 cup milk and vanilla. Gradually beat in remaining sugar and enough additional milk to reach spreading consistency.

For additional flavoring, add a tablespoon of raspberry liqueur and red food coloring or a tablespoon of coffee liqueur and teaspoon of coffee flavor. Top the coffee-flavor drink with a sprinkle of ground cinnamon.
